Yield from an oz of seeds?

I’m new to gardening and want to start a mini-bulk garden to sell stuff at the farmer’s market. I’m going to plant kale, chard, and spinach, a long row each, 30ft long maybe. Will an oz each of seeds be enough or should i go with a 1/4 lb? Thanks!

Does anyone know if there is something similar to New Covent Garden Market in Birmingham? I’d like to buy a bulk lot of bulbs and teracotta planters.
