Yield from an oz of seeds?

I’m new to gardening and want to start a mini-bulk garden to sell stuff at the farmer’s market. I’m going to plant kale, chard, and spinach, a long row each, 30ft long maybe. Will an oz each of seeds be enough or should i go with a 1/4 lb? Thanks!

    for kale, 1/16 oz sows 25 feet, generally.

    spinach, 1 oz does 75 feet

    chard, 1 oz will do about 100 feet.
