Every month I go to the butcher and get a package full of meat for the month. Included in it is a couple pounds of bulk sausage. It’s horrible because it has nothing added to it. Its just plain sausage. Ick. Anyways, how would I make ” italian ” sausage with it? What do I add in?? I normally buy the bulk italian sausage at the market when I need it but I thought maybe I’d try to do something with this icky sausage I have now.

You would need to add fennel seeds, salt, pepper, chopped Italian parsley. Those are the basics. If you want, you can also add garlic, basil and oregano. You can leave it as a bulk style, or buy casings and make links.
add a bunch of crushed garlic and some fennel seeds, pepper
6 Garlic cloves
1 T salt
1T basil
1T oregano
2 t paprika
2 t rosemary
2 t fennel
1 t red pepper flakes
please keep in mind that you can pretty much add more if you want. this is assuming you’re using about 4 pounds of bulk sausage. I would add or take away whatever you prefer but this is what I make my homemade italian sausage out of
The fact that it is labeled as “sausage” and not ground pork means that it is already seasoned with something. The most popular types of bulk sausage appear to be breakfast sausage and italian sausage (based on what’s available at my local store). Inquire of your butcher what type of sausage it is and let him know what you would prefer.
